Chef Anthony calls in the reinforcements to make ratatouille

Chef Anthony Fischer from the Pittsburg High School always has something special for viewers of the KOAM Morning Show and today was no exception. Not only did the day feature an amazing ratatouille recipe, but he called in reinforcements to give him a hand: a couple of ratatouille experts from the Culinary Dragons at PHS. Don’t let the reinforcements fool you – this is another Chef Anthony recipe that means easy and delicious. Here’s what you’ll need to make this dish at home:

  • 2 Eggplants
  • 6 Roma tomatoes
  • 2 Yellow squashes
  • 2 Zucchinis

And to make the sauce:

  • 2 Tbs. olive oil
  • 1 Diced onion
  • 4 Cloves of garlic, minced
  • 1 Red bell pepper, diced
  • 1 Yellow bell pepper, diced
  • Salt and pepper to taste
  • 28 oz. Can of crushed tomatoes
  • 2 Tbs. chopped fresh basil, from 8 to 10 leaves

And don’t forget to add some herb seasonings:

  • 2 Tbs. Chopped fresh parsley
  • 2 Tsp. Fresh thyme
  • 4 Tbs. olive oil

Missouri Historical Society preps for Route 66’s Centennial

COLUMBIA, Mo. – Though it’s a few years out, the State Historical Society of Missouri is prepping for the 100th anniversary of Route 66 in 2026.

To prepare for the iconic “Mother Road’s” Centennial, officials began collecting the following items for a grand display:

  • photographs
  • postcards
  • film and home videos along the route
  • records of roadside businesses
  • oral histories of people who traveled or worked along the road
  • small souvenirs or artifacts
  • artwork
  • architectural drawings of iconic structures and places

“We’re very interested in stories and materials ranging from the road’s origins to its peak period in Missouri (circa 1926-1960) to its decline following the rise of the Interstation Highway system,” said Kathleen Seale, coordinator of the State Historical Society’s Rolla and Springfield Research Centers.

According to the media release, Missouri is where Route 66’s name became official, as the highway received its number assignment via a telegram sent on April 30, 1926, to Springfield.

Route 66 played a significant role in the nation’s transportation history as the main artery connecting Chicago to Los Angeles by the late 1920s. In Missouri, the highway followed earlier trails, dirt tracks and gravel roads from the Mississippi River at St. Louis to the Kansas border west of Joplin.

Motels, restaurants, gas stations, and roadside attractions thrived on the steady commerce from travelers along Route 66, and now the SHSMO wants to hear about these experiences from you!

McDonald County High School prepares blueprints for upcoming shop

MCDONALD COUNTY, Mo. – Business Students in McDonald County are now one step closer to A unique “Brew, Serve, And Learn” experience.

After months of diligent planning, Business Students at McDonald County High School are now ready to present their design ideas for their student-run coffee show to architects and engineers.

Designs include:

  • floor plans
  • kitchen layouts
  • equipment placement

Officials say the coffee shop will be fully operated by students tasked with coming up with the menu items, drink mixes, worker scheduling, and more.

The project is a unique partnership between the McDonald County Student Chamber of Commerce and the McDonald County High School’s business department.

School and Chamber leaders hope to have the shop operational by January of 2023.

Chef Anthony makes an apple pie poutine

This might sound strange but Chef Anthony Fischer from the Pittsburg High School hit the KOAM studio to make apple pie poutine. Some have called poutine the unofficial national dish of Canada and it consists of French fries topped with cheese curds and gravy, but not Chef Anthony’s sweet and fruity variation. His is an apple pie variation that’s quick and easy to make and super delicious. Here’s what you need to make the crust:

  • 1 cup flour
  • Half a cup of shortening
  • Half a tsp. of salt
  • Add enough cold water so you can beat it – sticky and thick is the goal!
  • Roll out the mixture on a flour board

Now comes the apple pie poutine filling:

  • Peel and chop 8 apple
  • Add 8 tsp. of cinnamon
  • 1 cup sugar
  • Three quarter cup of cornstarch and
  • Half cup water

Joplin’s Whataburger odds improve as commissioners approve site plan for Rangeline

JOPLIN, Mo. – The Joplin Planning & Zoning Commission approved a site plan brought forth by Whatabrands LLC with the intent to bring a Whataburger location to the Joplin area.

City Officials looked at two adjacent locations at 2014 S Rangeline and 2019 S Highview Ave.

Now that the Commission has approved the review, it heads to the Joplin City Council.

Chef Anthony stops by the studio for another weekly cooking segment. What did he make this week? Mint-crusted lamb chops. So what do you need to make this at home?

  • Seasonings of your choice
  • Stoneground mustard

  • roast or sous vide to 135 degrees
  • roast in a 350-degree oven

Cup Noodle gives Pumpkin Spice fans something to celebrate (or not) this Fall

TOKYO – Nissin, the manufacturer of Cup Noodles announced earlier this month its upcoming flavor; Pumpkin Spice Ramen.

‘There’s a fine line between genius and insanity. Care to cross it with us?” Nissan said previously in a media release.

For many, ramen is a great meal to pair with a brisk Fall evening. One may even throw in a pumpkin spice latte to the mix. But what about the two combined?

To complete to culinary experiment, Nissan advises customers to add a topping of whipped cream for their enjoyment.

Officials say the product will be available in select Walmarts in the coming months.

It’s Thursday and that means Chef Anthony swings by Studio K to teach us how to cook sous vide style. Now, we touched on sous vide cooking style before but Chef Anthony gets a little fancier with his sous vide cooking style this time! You just need a steak of your choice (or steaks) and vegetables of your choice as well. Plus the proper tools to cook sous vide style.

Little Balkans Festival begins in Pittsburg

PITTSBURG, Kan. – Little Balkans, the week-long event that celebrates the region’s diverse cultural and ethnic heritage kicked off today in Pittsburg.

The event features different daily activities such as:

  • dancing & music
  • food & cooking classes
  • beverages & wine tasting
  • arts & crafts

“The festival was started in 19-85 by a group of volunteers that wanted to celebrate the cultural and immigrant heritage of the area. Celebrate our coal mining history because it’s been a large part of how this community was founded and created and so we do that this year with lots of fun, lots of live music, tons of food and we literally have something for everybody,” said Angela Meyers, President of the Little Balkan Association.

Tonight marked the first event of the festival; a cooking class that teaches 30 participants how to create a few favorite classic Southeast Kansas ethnic foods.
