Mr. Food: Brown Sugar Snack Cake

 

What You’ll Need

  • 2 cups biscuit and baking mix
  • 1 (16-ounce) package light brown sugar
  • 4 eggs, lightly beaten
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut
  • 1 cup chopped pecans

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a large bowl, stir together biscuit mix and brown sugar. Add eggs and water; beat with a spoon until blended. Stir in vanilla, coconut, and pecans. Pour into baking dish.
  3. Bake 30 to 32 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pan on a wire rack. Cut into squares to serve.
