Chef Anthony comes by the studio to make a sweet and salty recipe. What’s he making this week? Duck fat sea salted caramels. Here’s what you need to make the recipe:

  • 1C heavy cream
  • 5 tbsp duck fat
  • 1 1/2C white sugar
  • 1/4C corn syrup
  • 3 tsp fleu de del (salt)
  • 2 tsp vanilla extract (one 1 vanilla bean)
  • and a dash of bourbon
