Pittsburg, KS — Ever wanted to try a cooking competition? Well, there’s one happening down at the Dirty Mule on June 25th for you to try your hand at! Here are the details of the event:

  • June 25th, 2022
  • Happening at the Dirty Mule (134 S. Hwy 69)
  • Early registration is $100 and due by June 14th (you get three types of meat as a part of your registration: 4 whole chickens, 3 St. Louis ribs, and 1 Tritip)
  • Judging starts at 2 PM

  • Center-cut Ahi Tuna fillet
  • 2 tablespoons vegetable oil
  • 6 tablespoons aged balsamic vinegar
  • 2 tablespoons lemon juice
  • 1 garlic clove (peeled and halved)
  • 3/4 tablespoons kosher salt
  • 1 tablespoon coriander
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 and 1/2 tablespoon black pepper, fresh

  • 10 oz tuna, cut into small cubes
  • 4 green onions, finely chopped
  • 2 tbsp toasted sesame seeds
  • 1 avocado, chopped into small pieces
  • 1/2 cup diced cucumber
  • A handful of cilantro, chopped
  • 1 tbsp lime juice
  • Pinch of salt & pepper

Chef Anthony from Pittsburg High School stops by to give you a lecture on how to pick your herbs and spices for your dishes. For example, he talked about fresh parsley and bay leaf. He also covered different types of salts and peppers he personally used. A favorite of his students was the espresso salt. It’s salt soaked in espresso beans.
